Mint Julep Brownie Bites

It’s Derby week here in Louisville. We have lived here for almost 14 months and it didn’t take very long to grasp how much of a big deal derby is. Some schools will not be in session, business will close early, or not open at all. I’m not talking about all week, but on Friday, wish is called Oaks. 

I know very little about the Kentucky Derby and all the festivities, but one thing I am sure of is people love to drink Mint Juleps while watching the Derby. In fact, approximately 120,000 mint Juleps will be served on Saturday at  Church Hill Downs. 

Mint  Julep Brownie Bites

Since the beverages seem to be well taken care of, let’s talk dessert. A lot of people will be hosting parties and a bit size desserts are perfect for such events. So, in the spirit of Derby, I made mint julep brownie bites.

I love chocolate and mint together and the added bourbon gives it the Kentucky Derby touch. So, make a batch of mint julep brownie bites on Saturday, because the fresher the better for these treats, and enjoy the race.

Mint Julep Brownie Bites
  1. 1 package of unsweetened chocolate (4 oz.)
  2. 3/4 cup butter, melted
  3. 3 eggs
  4. 2 cups sugar
  5. 1 teaspoon vanilla
  6. 1 cup flour
  7. 1 teaspoon vanilla
  8. 1 1/2 teaspoon bourbon
  9. 1 1/2 teaspoon mint extract
  1. In a microwave safe bowl melt butter and chocolate, stirring every thirty seconds, until all is melted.
  2. Stir in sugar.
  3. Blend in eggs, vanilla, mint extract and bourbon.
  4. Add flour.
  5. Use a small cookie scoop or ice cream scoop, scoop batter into a mini muffin pan that's been well greased.
  6. Bake at 350 degrees for 12-14 minutes.
  7. Insert toothpick into the center of the brownies to check for doneness.
  8. More time may be needed by a couple of minutes.
