Fresh and lite chicken tacos-Diced grilled chicken, peach salsa, and celery mixed in with mayo and topped with cheese and cilantro.
Sometimes I don’t like trying new foods. There I said it!!! I’m a foodie who is comfortable with the foods I know and love. However, I know I am missing out on some great dishes by being closed off.Jason loves trying new types of meat but we are each probably a little reluctant of trying new veggies or a favorite food dish of ours that has been prepared a new way or with a jazzed up twist. Such as these fresh and lite chicken tacos! Ahem!!
With that said, I told Jason that I wanted to go one whole week with trying new recipes. We have been pretty good about trying out some new dishes and we always end up liking whatever we have tried. As a result of our new quest for new favorite foods I made this peach salsa. I had tried mango salsa with grilled chicken before and thought it was delicious and so we added this peach salsa to our chicken tacos.
A dish such as this is something I would try to order in a restaurant but it’s just hard for me to branch out and actually cook new foods. I mean the idea of fruit with dinner is more common to me in the form of pork chops and applesauce which is something I grew up eating and reminds me of this episode!!
I used diced grilled chicken and mixed it with olive oil mayonnaise, some diced celery for added crunch, this peach salsa, a squeeze of fresh lime juice, romaine lettuce, spices and cilantro. These tacos really are fresh and lighter than our traditional tacos which I like to fill with sour cream and lots of cheese. Yes, this has mayo but not that much and the peach salsa is also a big part of the filling. If you are like us and are trying to branch out in your home cooking than I say give these a try. Fresh and lite chicken tacos are just a refashioned version of our usual chicken tacos.

- Yellow Crunchy Taco shells
- About 3 cups of grilled chicken breasts, diced
- Romaine Lettuce (1 head)
- 1 lime, sliced and juiced
- 1/2 cup mayonnaise (I used the olive oil kind)
- I cup peach salsa
- I or 2 celery ribs, diced
- 2 teaspoons cumin
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste
- shredded cheese
- Combine chicken, mayo, peach salsa, lime juice,celery, and spices together in a bowl.
- Chop romaine lettuce and fill the bottom of taco shells with lettuce.
- On top of the lettuce spoon the chicken mixture followed by shredded cheese and cilantro.
- Increase the ingredients if you need more filling.
- I made 5 tacos from this.
