What better way to kick-off the Christmas season than with Grinch Marshmallow Treats! Our family will be watching the Grinch as part of our Christmas movie watching. When my oldest, who is 4 now, was 1 he liked the Grinch and then the couple years after he was scared of him. It will be interesting to see how the kids do this year. lol!
What’s needed for Grinch Marshmallow Treats
Red Icing in the tube
These festive treats were fun to make and kids will love them. Make a batch before watching the Grinch Stole Christmas or reading the book to make the time together even more special. These treats need to sit overnight so plan accordingly.
How long do these last?
Individual pieces can be wrapped in plastic wrap and placed in an airtight container. Store at room temperature for up to 1 week or they can be in the freezer for up to 3 months.

Getting the red heart on the rice treats is a little tricky because the rice cereal makes the surface uneven and not flat so some of the icing drops off the sides, but that’s okay because they still taste delicious and the grinch idea is still obvious.
Grinch Marshmallow Treats
- 2 10 oz. packages of miniature marshmallows
- 2 13 oz. jars of marshmallow cream
- ⅓ cup butter
- 1 Tbsp. Vanilla
- ½ tsp. salt
- 1 tsp. green food coloring
- 15 cups rice cereal
- ¼ green colored sugar
- non-stick spray
- tube of red icing
- Line a 13x9 inch baking pan with foil, allow foil to extend over edge. Lightly butter with foil.
- In a large stockpot or dutch oven melt butter over low heat.
- Add marshmallows; cook and stir until melted.
- Stir in marshmallow cream, vanilla, and salt.
- Stir in green coloring to the remaining mixture.
- Reserve one cup of the marshmallow mixture and set aside.
- Gently stir rice cereal into the remaining marshmallow mixture.
- Transfer cereal mixture to the prepared pan; use spatula sprayed with non stick spray to gently press mixture into pan.
- Coat an offset spatula with nonstick spray and pour the reserved 1 cup marshmallow mixture over the top of the cereal mixture; top with the green sugar.
- Weigh mixture down by placing a piece of buttered wax paper on top of marshmallow treats and add another 9x13 pan or larger on top of the wax paper and place a couple cans of unopened food on top to add the extra weight and let stand overnight like that.
- Using foil edges, gently lift bars out of pan and cut using a buttered knife.
- Cut into 24 bars and using the tube of red coloring draw hearts on each bar.
In the recipe, I have included the steps for weighing the mixture down. I skipped this step but the next time I make these, I will be sure to not skip that step. My bars were not as set as I would have preferred but still tasted great.
