3cupscooked and diced chickenI used 5 or 6 thinly sliced chicken breasts
2 to 2 ½cupsshredded cheese
1bottle of Sweet Baby Ray's BBQ SauceI used Honey Chipotle
10 6-inchflour tortillas
Salt
Pepper
Seasoning Salt
Instructions
Preheat oven to 350 degrees.
Place chicken in a casserole dish and sprinkle with salt, pepper and a small amount of seasoning salt.
Wrap in foil.
Bake until cooked through and juices run clear. Mine cooked for about 30 minutes.
Unwrap and bake for 5 minutes.
Once chicken has cooled begin dicing it into small pieces.
Place in a bowl and pour BBQ sauce over and stir to evenly coat.
Warm tortillas in the oven for 2-3 minutes.
Increase oven temperatue to 425 degrees.
Place a thin layer of chicken down the center of the shell.
Sprinkle with cheese.
Wrap tightly. Begin by folding one side over to create a seam between the two sides, then roll up the meaty part until it reaches the end.
Place seam side down in a casserole dish.
Once all tortillas have been filled, brush with melted butter.
Bake at 425 degrees for 18-20 minutes or until golden brown.
Notes
I topped my taquitos with more sauce. These can be made in advance and kept in the refrigerator. Do everything except brush with melted butter and bake. Allow to come to room temperature before brushing with melted butter and baking.
