Preheat oven to 275°F.
Layer bread slices on a wire rack that fits over a baking sheet. If you don't have a wire rack then just place on the baking sheet. Toast each side of bread for about 3-5 minutes on each side. You want the toast to just start to feel like it's getting toasty.
In a mixing bowl beat eggs and add milk, vanilla, sugar, cinnamon and nutmeg. Mix all together to combine.
Heat griddle to 350° or a skillet to medium-medium heat. Melt one TBSP of butter over cooking surface.
Dip bread slices one at a time in mixture. Depending on how shallow your bowl is you may need to gently press the bread all the way into the batter.
Cook for 2-3 minutes, depending how hot your cooking surface is, and flip and cook on the opposite side for 2-3 minutes. You want the outside to be golden brown and and the inside to not look runny.
Repeat with remaining slices. Top with butter and your favorite toppings.
I keep my french toast warm by placing the cooked slices back on the baking sheet they were toasted on and put in the oven that's at 275°F.
