Chocolate Chip Doughnut Muffins

Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 Tablespoon baking powder
  • ½ teaspoon nutmeg
  • ½ cup plus ½ teaspoon softened butter divided
  • ¼ cup brown sugar
  • 1 ¼ cup sugar divided
  • 1 egg beaten
  • ¾ cup milk
  • ¾ cup semi-sweet chocolate chips I prefer mini
  • 2 teaspoons cinnamon
  • ½ cup chopped pecans optional

Instructions

  • Combine flour, salt, baking powder and nutmeg in a mixing bowl
  • Combine ½ teaspoon softened butter, brown sugar, ¼ cup sugar, egg and milk.
  • Pour sugar mix over flour and whisk until incorporated.
  • Do not overmix.
  • Fold in chocolate chips and pecans if using.
  • Spoon batter into a greased mini muffin pan.
  • Bake at 350 for 20 minutes
  • Melt remaining butter
  • In a separate bowl combine remaining sugar and cinnamon
  • Once muffins are fully cooked remove from oven and place pan on a wire rack for 3-5 minutes
  • Remove muffins
  • Using one muffin at a time dip in melted butter and then the cinnamon-sugar mix and place on wire rack.
