No Bake Energy Bites


  • 1 cup oatmeal old-fashioned oats
  • ½ cup peanut butter I prefer natural peanut butter
  • cup honey
  • 1 cup coconut flakes toasted
  • ¼ cup ground flax seed
  • ½ cup mini chocolate chips
  • 1 tsp vanilla


  • Stir all ingredients together in a medium bowl until thoroughly mixed.
  • Cover and let chill in the refrigerator for half an hour.
  • Once chilled, roll into balls. I used my ice cream scoop and then made them a bit smaller.
  • Store in an airtight container and keep refrigerated for up to 1 week.
  • The amount this yields will depend on how big or small you shape these.
