Steel-Cut Oatmeal

Nutty steel-cut oatmeal! The ultimate breakfast comfort food!


Oatmeal is one of my very favorite breakfasts. I partake in a bowl several times throughout the week and if we go out for breakfast or brunch it is likely I will order oatmeal. My preferred oats are old-fashioned rolled oats but it is fun to switch things around from time to time so I recently made steel-cut oats. Steel-cut oats are nuttier than the old-fashioned rolled oats. Since they have a nutty texture it’s beneficial to toast the nuts in a skillet before adding to the milk and water mixture. When toasting the steel-cut oats it helps to boost their nutty flavor and aroma.  This recipe does require a bit more time, but it will be time well spent.

I know some people do not like steel-cut oats and I think it’s a texture thing. If you’re on the fence about them, then I think you should try this steel-cut oatmeal recipe to help you decide if you like them or not. This recipe is delicious! I used these steel-cut oats.


I love cinnamon, brown sugar and blueberries in my oatmeal. Sometimes, I add maple syrup as well. There are so many flavor add-ins that it just depends on your personal preference. Blueberries add such a burst of flavor and that is why I like adding them.

Steel-Cut Oatmeal


  • 3 cups water
  • 1 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 cup steel-cut oats
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla optional


  • Bring water and milk to simmer in large saucepan over medium heat.
  • Meanwhile,melt butter in a skillet over medium heat.
  • Add oats, stirring constantly, until golden and fragrant.
  • About 2-4 minutes.
  • Once oats are toasted and milk mixture is simmering, stir in oats and reduce heat to medium-low and simmer.
  • Continue to simmer and stir gently until mixture thickens and resembles gravy.
  • About 20 minutes.
  • Add salt
  • Add vanilla, if using
  • Continue stirring, gently until oats absorb most of the liquid.
  • Oatmeal should be thick and creamy. About 7-10 minutes.
  • Remove from heat and let sit uncovered for 5 minutes.
  • Spoon into bowls and top with desired topping.


Stir gently and frequently but not constantly. 🙂
