Pasta Salad with Feta Cheese-Rotini pasta, fresh vegetables and Nikos® Feta Cheese all tossed together to give you a delicious pasta salad
Pasta salad with fresh from the garden vegetables is a summertime must. Regardless if your grow your own vegetables or buy them from the market a pasta salad is a great way to use them. My pasta salad is something you can easily adjust depending on what vegetables you have plenty of. I "spiced" up my pasta salad this time by adding some Nikos® Feta Cheese. Who knew this tangy, crumble cheese could add such pizzazz to my pasta salad. I have really been missing out all these years, haven't I?!
I used Rotini pasta to make this pasta salad. I think a smaller spiral type pasta is perfect for a cold pasta salad. Also, I like to throw in some leftover grilled chicken breast and make a full meal with the pasta salad.
Italian dressing is poured over all the ingredients. If you plan on having leftovers then plan on adding a bit more dressing before storing. A lot of the liquid gets absorbed but you don't want to add too much dressing in the beginning or your pasta salad will be soupy. Not good!
This pasta salad is good the next day...if it lasts that long. 😉

Pasta Salad with Feta Cheese
Ingredients
- 3 cups Rotini pasta cooked drained and cooled (about 1 and ½ to 2 cups dry)
- 1 cup Nikos® feta cheese
- 1 cup halved cherry tomatoes
- 1 cup chopped cucumbers
- ½ cup slicked black olives
- Âľ cup Italian Dressing possibly more
- â…› to ÂĽ cup red onion
Instructions
- Allow pasta to cool and add to a bowl.
- Add remaining ingredients toss together.
- Cover tightly and place in refrigerator for at least one hour.
