Strawberry Pie

I always think that winter must be over when I start craving a strawberry pie. I love buying fresh strawberries from the farmer’s market and making one or two batches of freezer jam. Since we have moved to the mid south I bought my first flat of Mississippi strawberries a couple of weeks ago and they were delicious. I knew right away that I wanted a strawberry pie with these strawberries.

 I got out one of my trusty church cookbooks that is full of  all the “classic” recipes. I hope you can find some time to make this while the strawberries and fresh and plentiful. Enjoy!

Strawberry Pie
  1. 1 baked pie shell
  2. 1 qt. fresh strawberries
  3. 1 1/2 c. water
  4. 3/4 c. sugar
  5. 2T. cornstarch
  6. dash salt
  7. 1 small box strawberry Jell-o
  8. Whipped topping
  1. Slice strawberries and put in cooled baked pie shell
  2. Combine water, sugar, cornstarch and salt in a saucepan
  3. Cook until thick
  4. Stir in Jell-O and mix well
  5. Pour over strawberries while hot
  6. Chill overnight or until set
  7. Top with whipped topping
