I always think that winter must be over when I start craving a strawberry pie. I love buying fresh strawberries from the farmer's market and making one or two batches of freezer jam. Since we have moved to the mid south I bought my first flat of Mississippi strawberries a couple of weeks ago and they were delicious. I knew right away that I wanted a strawberry pie with these strawberries.
I got out one of my trusty church cookbooks that is full of all the "classic" recipes. I hope you can find some time to make this while the strawberries and fresh and plentiful. Enjoy!
Strawberry Pie
A summertime classic
Ingredients
- 1 baked pie shell
- 1 qt. fresh strawberries
- 1 ½ c. water
- Âľ c. sugar
- 2 T. cornstarch
- dash salt
- 1 small box strawberry Jell-o
- Whipped topping
Instructions
- Slice strawberries and put in cooled baked pie shell
- Combine water, sugar, cornstarch and salt in a saucepan
- Cook until thick
- Stir in Jell-O and mix well
- Pour over strawberries while hot
- Chill overnight or until set
- Top with whipped topping
