Hey there! I hope you all had a great weekend. We definitely did. We enjoyed catching up on our TV shows and spending time together.
I've got a salad recipe for you today. This will be my first salad recipe I have shared on the blog. I don't claim to be the healthiest eater, however we do eat a decent amount of fruit. Which balances out all of the sweets, right? Anyway, we could definitely stand to bump up our veggie intake. Which is why I made this yummy salad for our lunch recently.
I think this is a great autumn kale salad. It has very few ingredients but that is what is so great about this yummy salad. It can be put together in just a few minutes for a quick lunch or an addition to your dinner entree. We eat salads frequently for lunch so I had all these ingredients on hand.
This salad can easily be used with spinach rather than kale. However, I would limit or omit the sea salt.
I asked my husband what he preferred between kale and spinach. He chose the kale. I think I would chose spinach.
Now, I would like to know which one you prefer. Kale or Spinach?
Apple Cranberry Kale Salad
Ingredients
- 4 cups chopped kale
- ÂĽ tsp sea salt
- 1 tbsp. olive oil
- 2 tbsp. dried cranberries
- 1 small apple diced
- 2 tbsp. sunflower seeds
- juice for half a lemon
Instructions
- Place kale in a bowl and sprinkle with sea salt
- Massage the sea salt into the kale for about a minute so each piece is coated
- Let sit for 10 min until the kale has shrunk
- Toss with remaining ingredients
