Fudge Brownies: Rich and chocolaty with a creamy, fudgy topping...The brownie recipe everyone needs in their collection.
I love to take food to gatherings and be able to share it with people. However, I have a ongoing list (it's kinda a mental list, but still a list) of recipes to try. Yet, when it's our turn to make food for our small group I HAVE NO IDEA WHAT TO MAKE. Then, I wait until three hours before group starts to go to the grocery store, run around like a mad woman and rush home and make something. I am indecisive, that's my problem. I wanted to make something with pumpkin, but not everyone likes pumpkin. So, I decided on brownies. I wanted to keep it very basic so I didn't make these. Rather, I made plain fudge brownies. I say plain because I thought about adding in nuts, or mint pieces, but for the sake of feeding 12 adults I figured it was best to just keep it simple. So these made an appearance at group this week!
Food is trendy and with food trends I think we sometimes forget about our basic recipes. The recipes that are the heart and soul of baking. You like my sentiment, there?
Back to the brownies. This recipe is great to have on hand because it is easy to throw together if you're short on time..or like me and don't' decide what to make until the last minute. {AHEM}
These brownies are rich and decadent and only a little piece is needed to fill your sweet tooth. Less calories that way, too. Wait, there's no calories in brownies!! AMIRIGHT?!?
Fudge Brownies
Ingredients
- ½ cup butter
- 3 ounces unsweetened chocolate coarsely chopped
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- â…” cups all-purpose flour
- ÂĽ teaspoon baking soda
- Cream Cheese Frosting
- 1 cup semisweet chocolate pieces
- 6 ounces of cream cheese
- ½ cup powdered sugar
- 1 teaspoon vanilla
Instructions
- Line an 8x8 inch pan with foil and grease foil.
- In a medium saucepan heat and stir butter and unsweetened chocolate over low heat until smooth and melted.
- Pour out of saucepan and into a large heat proof bowl and allow to cool.
- Stir in sugar to cooled chocolate mixture.
- Add eggs one at a time, beating well with a wooden spoon just until combined.
- Stir in vanilla.
- In a small bowl stir together flour, and baking soda.
- Add flour mixture to chocolate mixture; and stir just until combined.
- Spread batter into prepared pan.
- Bake for 30 minutes.
- Cool in pan on wire rack.
- Remove brownies from pan by lifting the foil.
- Remove foil and place brownies on the wire rack and top with the frosting.
- After frosting is set, move brownies to cutting board and cut brownies.
Frosting
- In a small saucepan cook and stir 1 cup of the semisweet chocolate over low heat until smooth. Add vanilla.
- Add cream cheese.
- Add powdered sugar.
- Stir together until smooth and creamy.
