Lasagna Recipe

What’s the weather like where you live? It was -2 this morning when Jason left for work. Here in Louisville we are expecting record breaking low temperatures for the next several days. In addition to that, we also have about 8 inches of snow on the ground. All the winter weather started late Sunday evening. My in-laws drove here on Sunday for a short visit which got even shorter because of the weather. We didn’t have any big plans so it worked out fine. I made this lasagna recipe and some cupcakes that I will be sharing the recipe for pretty soon. 

Lasagna Recipe

I love making lasagna when we are having guests. I personally love lasagna and Jason “likes” it and since it is a lot for two people I tend to not make it very often, that is unless we are having company. That way there’s more mouths to feed and less leftovers in the fridge.  Although, what leftovers there are..they’re pretty good! 

How do you feel about lasgana? Love it? Hate it? Are you like my husband and asks where the mushrooms are? Ummm…there’s some fresh ones in the fridge, babe. I bought some and put on a homemade pizza for you. Is that not enough mushroom for one week?!?! 🙂

Feel free to add some mushrooms if you’ve got a mushroom luva  in your family. I try to be sneaky, but it never works!!

During dinner everyone was raving about the lasagna and asked if I would be sharing the recipe on the  blog. My response was, “look for it this week”!

Homemade Lasagna Recipe

Ingredients
  1. 1 Package of Lasagna noodles
  2. 1 pound of ground beef
  3. 1 pound of Italian Sausage
  4. 3 garlic cloves
  5. Onion (I cut the onion into medium size pieces and used about 1/8 of a cup) Add more if you prefer.
  6. 1 14.5 oz. can of diced tomatoes
  7. 2 8 oz. cans of tomato sauce
  8. 1 6oz. can of Italian Style tomato paste
  9. 1 tablespoon Italian seasoning
  10. 1/2 teaspoon crushed basil
  11. 1/2 teaspoon garlic powder
  12. 1.2 teaspoon onion powder
  13. 1/2 tablespoon kosher salt
  14. 1 teaspoon sugar
  15. 1 tablespoon parsley
  16. 2 8oz. packages of Mozzarella Cheese (I buy the blocks of cheese)
  17. Parmesan Cheese ( I bought a 10 oz. container)
Cheese mixture
  1. 2 eggs
  2. 1 tablespoon parsley
  3. 1 teaspoon Italian Seasoning
  4. 1 small container of Ricotta cheese
  5. 1 cup shredded Parmesan cheese
  6. 1/4 teaspoon pepper
Instructions
  1. In a large stock pot boil lasagna noodles based on package directions. I used 8 noodles.
  2. I remove mine from the water about 2-3 minutes earlier than the package recommends. I place the cooked noodles on a sheet of aluminum foil.
  3. In a large skillet cook sausage and ground beef with onion and garlic.
  4. Drain fat.
  5. Add cans of tomato sauce, diced tomatoes and tomato paste.
  6. Add sugar, salt, pepper and spices.
  7. Allow to simmer together for about 15 minutes.
  8. In a medium bowl add the ricotta cheese, eggs, Parmesan cheese, Italian seasoning, parsley, and pepper. Mix all together until creamy.
  9. Layer the casserole dish with a layer of lasagna noodles on bottom.
  10. Followed by a layer of the cheese mixture.
  11. Next add a layer of mozzarella cheese.
  12. A layer of the meat mixture.
  13. Repeat the process, ending with the last of the meat mixture.
  14. Sprinkles the remaining Parmesan cheese over the top.
  15. Bake at 350 degrees for 35-45 minutes.
Notes
  1. I like to make the lasagna earlier in the day and covert with plastic wrap and keep in the fridge.
  2. Remove from fridge about 20-30 minutes before baking. The lasagna may need to be baked a few minutes longer.

Crock pot bbq ribs-A slab of baby back ribs coated with a dry rub, placed in the crock pot and your favorite barbecue sauce poured over the top. Easy and Delicious!

Baby Back Ribs with a thick layer of BBQ sauce cooking all day in the crock pot…Sign me up!

These BBQ ribs are so easy to make and taste delicious. I would know since I’ve made them a gazillion times. A gazillion could be a slight exaggeration…but it’s pretty close.

Jason loves BBQ ribs so I started making them in the crock pot and he always says how delicious they are. I agree and I love how easy it is to make these and the clean up is minimal too. That’s a win-win for me!

Since we just officially, though not really, ended summer, and school is in full swing I think it’s a good time to let the crock pot do some cooking for you. I love my crock pot!

BBQ Ribs in the Crock Pot

I’m such an unashamedly girly girl and don’t like to be dirty so I won’t order ribs at a restaurant because I don’t want to get BBQ sauce all over my face. However, by eating BBQ ribs at home allows me to enjoy the ribs, mess and all.

BBQ Ribs in the Crock Pot

Ingredients
  1. Rub
  2. 2 Tbsp paprika
  3. 2 Tbsp packed brown sugar
  4. 1 Tbsp kosher salt
  5. 1/2 Tbsp ground black pepper
  6. Ribs
  7. 5-6 lb.s baby back ribs
  8. 2-3 C favorite bbq sauce
Instructions
  1. Combine paprika, brown sugar, salt and pepper in a small bowl.
  2. Rub the mixture over the meaty side of the ribs
  3. Place ribs in slow cooker standing them upright with the meaty side against the wall of the cooker.
  4. Pour the barbecue sauce over the ribs
  5. Cook on low for 4-5 hours until tender
  6. Remove ribs and allow to sit for 15 minutes (cover with foil)
  7. Cut ribs apart
  8. Cover with bbq sauce left in cooker if desired
